The best BaNaNa Bread EVER!

This is one of my very Best friends recipe!  
It is soooo Yummy!  
But I am a little bit of a Health Freak, 
so I tried to make a little bit Healthier
and it actually turned out super delicious!

This is the Original recipe
(Healthier version in)

Cream:  1/2c. shortening (1/2 c. coconut oil)
*Coconut Oil from Health food store

1 1/2c. sugar


Add:  2 eggs  
(Eggs from our own chickens pictured below)
*I doubled it so there are 4 eggs in this pic.


Mix together

Add:  1c. mashed bananas 
*about 2 bananas

Set aside 1/4  c. sour milk
*1/4c. milk 2 tbs. vinegar
(Rice milk and apple cider vinegar with the "Mother")
*Rice milk from Costco
*Vinegar from Health food store

1 tsp.vanilla

Slowly add in:

2 c. flour
(whole wheat flour)
*I use this kind or grind my own in my Vita-Mix

*this flour is Non-GMO
*Certified Chemical free
*Unbleached
You can get this at Walmart!

1/4 tsp. baking powder
(Aluminum Free)
*from costco

3/4 tsp. soda
1/2 tsp. salt
(sea salt)


Mix all together!

Bake at 350 for about 55 minutes
*Makes 1 large loaf
I doubled it so there are two!


So Yummy :)

My New Vitamix Mixer


I just got a VitaMix blender from Costco the other day and I am loving it!  I am trying to follow a more vegatarian type lifestyle and this is defintley making it easier!  I got it about a week ago and have used it 2-3 times each day!  This morning I grinded my own wheat and made pancakes,oil free, with agave nectar for the syrup.  My kids loved them.  Then we made a shake that consisted of carrots, apples, grapes, spinach, limes, pineapple, and ice.  Very Yummy!  Later for lunch I threw in a few things and made a simple salsa.  I have really enjoyed it so far!  I recommend it to anyone!

Fun Halloween Food

Last night we made a fun dinner with the kids!  They had a lot of fun helping and eating too!
Monster Mouths
(Cut an apple into quaters, wedge out the middle and add sliced almonds)

Mummy heads
(English muffins, pizza sauce, mozerella cheese slices cut into strips, sliced olives and green peppers for pupil)

Wedding Cake Challenge

A few months back my mother-in-law called me and asked me if I would be interested in making my brother-in-law's wedding cake. The cake was going to be for an open house they were having a couple of weeks after their wedding. I agreed to the challenge and thought it might actually be a little fun to take it on.
I browsed the internet for some wedding cakes, looking for something a little less formal since it was for an open house, and came upon cupcake wedding cakes! I guess they are the new thing! I thought that would be perfect!
It was a lot of work!!! I am not sure I will be doing one again any time some, but in the end it turned out good!
Their colors were brown, pink, and white. Here is what I came up with!
Two 8" round chocolate cakes layed on top of eachother

Rolled Fondant layed on the top
Rolled Fondant Pink and Brown dots cut out different sized round cookie cutters
